Hash Brown Breakfast Cups 🍳

Ingredients (for 12 cups)
20 oz frozen shredded hash brown (565 g), thawed
1 ¼ cups shredded cheddar cheese (125 g), shredded
1 tablespoon olive oil
12 eggs
salt, to taste
pepper, to taste

Preparation
In a bowl, combine hash browns, one cup of cheddar (100 g), salt, pepper, and olive oil.
Divide hash brown mixture into the cups of a 12-cup muffin tin. Press the hash browns down firmly along the shape of the cups. Bake at 400°F (200°C) for 20 minutes to set the cups.
Crack an egg into each cup and sprinkle some salt, pepper, and the remaining cheddar on top. Bake again at 350°F (180°C) for 13-15 minutes, or until the egg whites have set.
After they have cooled, remove cups by running a knife along their edges. Serve with all the toppings you desire!

1 tbsp. extra-virgin olive oil
3 cloves garlic, minced
1 c. low-sodium chicken broth
3/4 c. 1% milk
1/2 c. freshly grated Parmesan
2 tbsp. plain Greek yogurt (optional)
Freshly ground black pepper
Pinch crushed red pepper flakes
Freshly chopped parsley, for serving 
DIRECTIONS
In a large pot of salted boiling water, cook linguine according to package directions until al dente. Set aside ½ cup of pasta water, then drain pasta and set aside.
In a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute. Add broth and milk and bring to a boil. Reduce heat and add Parmesan and yogurt, if using. Let simmer until sauce is thickened, 5 minutes. Season with salt, pepper, and a pinch of red pepper flakes. 
Add pasta and a 1/4 cup reserved pasta water to sauce and toss to combine. If sauce is too thick ad more pasta water a tablespoon at a time until desired consistency. Garnish with parsley before serving.

Ce soir je vous propose en EXCLU la recette signature de monsieur, celle qu’il propose souvent lorsqu’on reçoit du monde à la maison et que c’est son tour de cuisiner 🙈. Vous aussi vous avez des spécialités à la maison ?

La recette :
Pâte brisée • 500 gr d’oignons • 1/2 litre de lait • 2 c.à.s de farine • 3 jaunes d’œufs • 40 gr de beurre • sel • poivre • muscade.

1. Étalez la pâte feuilletée dans un moule à tarte. Piquez le fond avec une fourchette. 
2. Émincez les oignons et faites les fondre dans le beurre à petit feu. Saupoudrez la farine au dessus jusqu’à ce qu’elle se mélange parfaitement sans faire de grumeaux.
3. Ajoutez les 3/4 du lait, amenez à ébullition en remuant le tout. Ajoutez progressivement le reste de lait ainsi que les jaunes d’œufs. 
4. Ajoutez-y du sel, du poivre et de la muscade. Versez le mélange sur la pâte dans le moule.
5. Faites cuire au four à 220 degrés (préchauffez bien le four au préalable) pendant au moins 20 minutes.

La recette :
Pâte brisée • 500 gr d’oignons • 1/2 litre de lait • 2 c.à.s de farine • 3 jaunes d’œufs • 40 gr de beurre • sel • poivre • muscade.

1. Étalez la pâte feuilletée dans un moule à tarte. Piquez le fond avec une fourchette.
2. Émincez les oignons et faites les fondre dans le beurre à petit feu. Saupoudrez la farine au dessus jusqu’à ce qu’elle se mélange parfaitement sans faire de grumeaux.
3. Ajoutez les 3/4 du lait, amenez à ébullition en remuant le tout. Ajoutez progressivement le reste de lait ainsi que les jaunes d’œufs.
4. Ajoutez-y du sel, du poivre et de la muscade. Versez le mélange sur la pâte dans le moule.
5. Faites cuire au four à 220 degrés (préchauffez bien le four au préalable) pendant au moins 20 minutes.
