IT’S PUMPKIN (SEED) SEASON! Carving your own pumpkin for Hallowe’en? Don’t discard the seeds. I make sure to eat a handful of pumpkin seeds every day. They are packed with vitamins and minerals and are an excellent source of protein.⁠

Choose small- or medium-sized seeds to roast as the larger ones are a bit tough. Your seeds will likely be white which is different to the ones you normally buy at the shops. That’s because the dark seeds are the inner kernel which are difficult to extract so don’t bother!⁠
⁠
Wash the seeds, discarding as much pulp as you can.⁠
Boil some salted water in a saucepan, add the seeds, boil for 5-10 mins (depending on size) then dry them.⁠
Toss the seeds in a little healthy oil, add seasoning and spread evenly on a baking tray.⁠
Roast the seeds for about 8-10 minutes at 180C/gas mark 4.⁠

Keep them fresh in an airtight container for up to three days. After that, they might lose their crunch.⁠
⁠
