How do you do Sunday dinner? After being out all day I was pretty pleased that I could put this together. Shrimp and sea scallops over spaghetti squash with cauliflower, mushrooms and chick peas.
But then, my son sent me a picture of the dinner he made- and I think it may have put mine to shame 😂 Seared tuna topped with seaweed, and a stuffed portobello mushroom. Kudos to him! 
Shrimp and scallops are seared in a tablespoon of olive oil and garlic. The cauliflower is sautéed in olive oil, crushed garlic, pepper, cumin and turmeric, fresh squeezed lime and fresh cilantro.

Rare times where my makeup is actually done and I’m not wearing gym clothes. What is my life 😅 ANYWAY! Some pointers for those of you who are like me and are trying to watch their calories this wonderful holiday season! ⁣

*Don’t restrict too heavily. Live a little. It’s thanksgiving! Remember, BALANCE! This word is very important. I always go for an 80/20 balance. If I know I’ll be having a heavy, not very healthy dinner, I will have a small and healthy breakfast to help balance it out. ⁣
*Serving sizes are your best friend. I love food and get overwhelmed and want to eat like freaking everything. I’ve learned to take very small servings of everything, so that way I can still try everything, without over eating and eating myself into a coma⁣
*DO NOT step on the scale for at least 3 days after. Your body will be bloated and holding on to allllll that water so the odds are the number on the scale will be up. But that’s not actual fat you gained, it’s just your body doing it’s thang and you don’t want to get discouraged from that. Jump back on track the next day and drink plenty of water. Your body will be back to normal in no fine! ⁣
*Lastly, enjoy your time with your loved ones. Not all families are able to see each other whenever they want, so the holidays are a great time for people to get together and show their appreciation. ⁣

Dinner! Taco salad with air fried tortilla bowl! 😋

Took 1 burrito size tortilla, placed it in a ceramic bowl, spritzed it with olive oil, placed the whole bowl in the air fryer, on 400 for about 4 mins, then removed the whole bowl, placed the tortilla upside down, spritzed again with olive oil and cooked again for about another 3 mins

Includes: salad mix, chicken, black beans, corn, a little salad dressing, a sprinkle of cheese and lots of salsa!
