Mind over Matter! Back then I used to get all kinds of comments of how I was an instructor and I "looked" the way that I did. It baffled people that I was so active and still was overweight. I promised myself a few things when I decided to become a fitness instructor was to keep going no matter what, to beat the odds and break the society mold that I too could be a fitness instructor no matter the size or how I looked, that should I ever know what it tastes, looks and feels like to be a thinner version that I will always remember that woman on the left. As I reflect back to those days and compare to now... So much has changed with me but one thing that wont change is my heart and love for what I do and who I do it for. Create that mindset and keep looking up! Because looking back has nothing and looking up has everything you ever imagined. Dont give up! Fight for your health.⁠

Im surprise she doesn’t have cradle cap. Her older siblings had em. She’s alert when she’s up but rather sleeps. If I don’t wake her up, my poor boobies 😒🤡🤣. If allow, she’ll wake up once at night to eat.

INGREDIENTS:
2 1/2 Cups almond flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
4 large eggs beaten
2 medium zucchini, grated
1 Cup cheddar cheese
9 ounces ham, chopped

INSTRUCTIONS:
1. Preheat oven to 375F and spray a 12 cup muffin pan with cooking spray. Set aside.
2. Grate your zucchini and chop your ham and set aside
3. In a large mixing bowl combine the almond flour, baking soda, salt, garlic powder, onion powder. Add in the eggs, zucchini, cheese, and ham. Mix well !
4. Spoon the mixture evenly into the muffin tins. The cups will be completely full
5. Bake in the oven for 25 minutes or until toothpick comes out clean. Serve and enjoy!
These can be kept in the  fridge for up to one week!

🔥 Creamy chicken, garlic and cheese make a delicious combo of flavors and with the addition of broccoli and spinach, you’ve got yourself a complete nutrition-packed meal that will fill you up for hours! 🥦

Ingredients
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves garlic minced
1/2 cup tomatoes chopped
2 cups broccoli florets
2 cups baby spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese
Instructions

Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through. 
Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.

Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.
