Cowboy-rubbed AND Triple Cowboy-cut. Caveman style reverse seared hanging tomahawk ribeye steaks!!! Just incredible live fire cook alongside my good buddy @OverTheFireCooking at #SocialFeasts
in the mountains of Bryce Canyon National Park!!
To prep we, these prime-grade cowboy-cut ribeye steaks were seasoned liberally in a homemade blend of ancho chili, smoked paprika and cumin, roasted garlic, a robust olive oil, kosher salt and a heavy amount of coarse black pepper. We then rolled the fat cap in a thick layer of ground coffee-based Dirt rub from my friend @SasquatchBBQ and the folks at @Spiceology. We then wielded the torque of a handheld power drill to bore holes in the bone ends of the ribeye, then tied on several feet of 304-grade stainless steel wire and hung the steaks over our campfire to slowly smoke, until a beautiful 2-tones crust developed upon the meat's exterior and internal temperature measured wall to wall 110F. We then hacked these bad boys down and threw them directly in a raging inferno of lump @CowboyCharcoal embers and smoky hunks of @WesternWoodBBQ hickory hardwood. Prepared to medium-rare perfection then basted to finish with a slowly roasted bone marrow, shallot and fresh thyme butter. Garnished with seasonal herbs and wild flowers, then paired alongside a several of Utah's finest handcrafted, ice cold lagers. This is what campfire cooking in the great outdoors, amongst family and friends is all about!! -Cheers, David
