Orange Almond Muffins Recipe
I have been loving these muffins for fall. This is one of my recipes from my cookbook. Re: FRESH Re: CHARGE Re: FUEL . The combination of the orange and almonds is delicious. The flavor is so bright and refreshing. These are the perfect snack or great for a quick breakfast.

Makes: 12 muffins
2 1/2 cups almond flour
1/2 tsp salt
2 tsp baking powder
1/4 cup orange juice
1/4 cup milk ( I prefer non-dairy, such as almond milk
1/2 cup unsweetened applesauce
1/2 cup coconut sugar
2 eggs (can subsitute with flax eggs if vegan)
2 tablespoons orange zest
1 tablespoon orange juice
1 tsp vanilla extract
1 tsp almond extract
1 tablespoon chia seeds
1. Preheat oven to 350 degrees. Spray a muffin tin with nonstick cooking spray.
2. In a medium sized bowl, combine the dry ingredients. In another bowl, combine the wet ingredients. Then combine the wet to the dry mixture until smooth.
3. Divide evenly into the muffin tin. Bake in the oven for 10-12 minutes. Remove from the oven and let cool.
