When I’m in a flare or my stomach is feeling sensitive this is one of my favourite recipes. miso is one of my favourite fermented foods and it’s so flavoursome! Having an almighty flare-up today. Have tried bringing back tomatoes into my diet but they seem to be the cause.  So I’m back onto the aip diet. It’s been an absolute age since we had pizza in this house and finally got a hankering for it. My base is from @meatified #nourishcookbook the rosemary flatbread incorporating plantain. And for the first time having an AIP pizza I (inc my gut) really enjoyed it. Not such a huge hit of starch I presume which is what a lot of these bases are made from. 
I digress: toppings are roasted pumpkin and broccoli, rocket and bean sprouts tossed in olive oil, avocado and @lil_bean_microgreens broccoli sprouts. With an extra drizzle of green herby sauce. 
The other half of the flatbread I stuck under the grill (broiler) to turn into crackers and had with lambs liver pate

So, here’s the deal — my body has been through a significant amount of trauma over the past 4-months and I’m still feeling completely out of sorts. I need to get back to nutritional basics and clear my diet of allergens and inflammatory foods. I’m also entering a busy few months of recruiting and program launching, which leaves me very little energy and bandwidth for meal preparation. To remove that huge stressor and make my life a whole lot easier, I’ve decided to use @thistleco and have lunch and dinner delivered 6-days/week. I’m so excited about this change and the amount of time that I’m going to save with these delicious meals!

I'm beat. This evening I carved out some time to do a little prep work and bread-making. I bought a boat load of green bananas the other day and they needed to be peeled, diced, and thrown in the freezer before they started to ripen. I also bought three green plantains with which I was going to use some of the green bananas to make OMG It's Bread by Stacey of @realworldaip. 🍌 .

Then I remembered the recipe I saw here the other night from @brookelibbypaleo, https://www.instagram.com/p/B1Q1keoARE8/?igshid=35gfh96wn41u, that blended whole green bananas (including the skin!) with two eggs to make a waffle batter. I haven't reintroduced eggs yet, but a light went off over my head and I thought that maybe I could put the OMG It's Bread batter in the waffle maker. My first effort included the skin of the green bananas as the new recipe had called for. When it was done, it looked amazing. I was really excited. I placed it on a wire rack to cool, then took a bite ... then spit that bite right out. Blech. It was really gummy. 🤮 .

Back to the drawing board, but this time I did it with the OMG It's Bread batter exactly as the recipe calls for when baking in the oven. I set a timer for 25 minutes and went out front to sweep the leaves up from the sidewalk. About 40 minutes later ... 😱😱😱! Yep, burnt to a crisp. You could hear the broken bits clink as they landed in the green waste bin. I have one more plantain left, but I'm too exhausted to go a third round tonight. Plus, the plantains should be more yellow anyway, so I'll try again in a couple of days. 😴 .

Meanwhile, I'll end on a good note with a picture of Boston Faked Beans using the green banana bits, also invented by Stacey. They are to die for. Go to her YouTube channel and find that recipe. You will be amazed. After this, I think I'll leave the experimenting to the professionals.

MEAL PREP.
Sunday is meal prep day and I went crazy this weekend and did some Saturday prep too. If you want to stay on track you have to plan your meals out for the entire week. It’s the best for budget and most efficient way to go! Today I made carnitas, coconut blueberry granola, Italian chicken poppers with zucchini and spinach, zucchini fritters, pesto, no bake cookie dough balls, roasted sweet potato, nomato sauce, cassava flour tortillas, and cheese sauce. I find that cooking at least half of each meal at the beginning of the week helps me enjoy my time with my family after work while allowing us to still eat healthy. This week’s meals are all about doing an AIP version of splurges- pizza, tacos, nachos, Italian dippers. Stay tuned!

MEAL PREP.
Sunday is meal prep day and I went crazy this weekend and did some Saturday prep too. If you want to stay on track you have to plan your meals out for the entire week. It’s the best for budget and most efficient way to go! Today I made carnitas, coconut blueberry granola, Italian chicken poppers with zucchini and spinach, zucchini fritters, pesto, no bake cookie dough balls, roasted sweet potato, nomato sauce, cassava flour tortillas, and cheese sauce. I find that cooking at least half of each meal at the beginning of the week helps me enjoy my time with my family after work while allowing us to still eat healthy. This week’s meals are all about doing an AIP version of splurges- pizza, tacos, nachos, Italian dippers. Stay tuned!

A lot of you have asked me how I’m still helping and coaching people on their journey while I’m pregnant.

First of all, it’s a wellness journey. I help people in ALL aspects of their journey. Weigh loss, setting up a nutrition plan , self love, self care, personal development, life balance, etc.... I don’t JUST help people with weight loss but with an all around wellness journey.

Second, I’ve lost 100+ lbs before. Just because I’m pregnant doesn’t mean all that knowledge and training went out the window 😂 I can still help people while NOT losing weight .

Third, this is the BIGGEST wellness challenge I’ve had in my life. Having a healthy pregnancy after fighting SO long to get here doesn’t call for me to get lazy now. My health and wellness is even MORE important now that it’s more than just me & I’ve been having a blast welcoming more #mommiestobe into my wellness studio so we can do it together.

Day 5 eating AIP
Breakfast was a hot cup of green tea with honey. I’m trying to lessen the honey with each cup and I’ve replaced my one cup of coffee a day with this instead. Not the same but I’m enjoying it. With my tea I had mixed greens w/ leftovers again (roasted beets & carrots, green onion, 1/2 an avocado, and blueberries) and the balsamic vinegar/avocado oil dressing. 2 slices of bacon (even though there are 3 in the picture. My daughter took one) and lastly a pickle. Seems like such an odd breakfast but it was really good. #aipbreakfast 
Lunch was really good and filled with memories of my mom and dad (see last post). #aiplunch 
Dinner was more leftovers. Mixed greens, carrots, cucumbers, cucumber salad w/red onion, pickle spear, and a burger with 1/2 an avocado on top. Surprisingly it was really good and filling. #aipdinner 
I haven’t really snacked today, aside from having a few bites of the cucumber/red onion salad here and there. 
I started posting my daily meals as an accountability experiment for myself and as a record of meals to look back on when I run out of ideas and forget what I’ve made and enjoyed. HEAL |  Am I getting “better” or “worse”?

While I was healing that question plagued me. Whenever I’d experience a symptom I’d wonder if it was part of the healing process or a sign of a flare up or what.
.
The constant questioning, and the anxiety that went along with it was EXHAUSTING.  Double tap if you can relate.

Finally, I got so fed up that I decided to just believe that no matter what I experiencing, I’d perceive it as healing.
.
That pain? Healing taking place. That fatigue? Healing taking place.  Any other symptom? Healing. Taking. Place.
.
We get to choose our thoughts. We can choose to set aside the dualistic mindset of “better vs worse” and adopt the belief that we are always learning, and always healing. And when we do, we find that its true.

⛺️Camping trip! Really starting to embrace my rest days! When I first started working with a nutrition coach I wasn’t taking any rest days.... now I’m taking 2 a week! This weekend was all about the rest and relaxation! 🗻We went camping up in the mountains and didn’t do any sort of workout! Normally we would have taken a light hike or something, but the puppy is still learning how to walk on a leash.... so we don’t get very far. Organic Paleo Stir-Fry! 
Sometimes when I make foods, my son LOVES them, sometimes he thinks they are just 'alright', and sometimes he thinks it's straight up GROSS!

But a goal we've always had was to try one bit of the food. That's it. One single bite. He could usually manage that. (And the next time I served it again... He'd try one bite) By the 3rd time, he'd often eat the whole serving!

And if he was still averted to the food, I'd try hiding it in something, cooking it a different way- so he didn't recognize it, and or use different seasonings.

He's eaten this exact stir fry MANY times (but this time I used purple cabbage instead of white and added shredded lettuce) and he said he wasn't a big fan of it. But it tasted the same as the other one!

So sometimes... We have to be detectives and try and figure out what makes them reject or neglect a certain food ( color, smell, texture, etc )

Maybe he's just purple cabbaged out! 😜 😂

RECIPE BELOW // AIP Vietmanese Shredded Chicken Salad 
This salad never fails to get the thumbs up. It’s healthy, refreshing and, with its tart dressing, full of flavor. You’re going to love this, too! 
INGREDIENTS (Serves 4) 🌿4 large chicken thighs, skin on and bone in

Salad:
🌿½ small red onion, thinly sliced
🌿2 medium carrots, julienned (cut into matchsticks) or grated
🌿4 inch piece cucumber, julienned
🌿3+1/2 inch thick piece daikon, julienned or grated
🌿½ packed cup Thai (or 1-oz packet regular) basil, shredded
🌿1 cup cilantro, chopped
🌿¼ packed cup mint leaves, chopped

Dressing:
🌿1 tsp fish sauce
🌿2 garlic cloves, minced
🌿1 tbsp raw apple cider vinegar
🌿½ tsp freshly grated ginger
🌿2 tbsp avocado oil
🌿2 tbsp coconut aminos

INSTRUCTIONS
👉Preheat the oven to 375 degrees F.
👉Heat a large ovenproof sauté or frying pan (preferably cast iron) on a medium high heat, until very hot. Now place the chicken thighs into the pan, skin side down. You don't need to add any fat as you'll find the chicken skin renders a lot. Leave, undisturbed, for 5-6 minutes until the skin has a good deep brown color. If you try to move the chicken pieces too soon, you may rip the skins off, as they will stick to the base of the pan. When the skin is nicely browned, remove the pieces and put them onto a plate. Pour the rendered fat into a small pot and use this for something else, another time.
👉Return the chicken pieces to the hot pan, this time putting them skin side upwards. Place the pan into the oven and cook for around 15 minutes until cooked through. Remove the chicken thighs and put them onto a large, clean plate and allow them to cool down.
👉To make the dressing, simply put all the ingredients into a small bowl and mix well.
👉Put the chicken pieces onto a chopping board and cut into fairly thin slices.
👉Put the salad ingredients into a serving bowl, pour over the dressing and mix well. Divide the salad between four plates and top with the shredded chicken. Serve.

🙈THE NAKED TRUTH🙈
In the beginning my weight loss journey had seen me reach a whole new confidence when it came to my skin 🙌🏼 Having skin problems from my autoimmune disease has ALWAYS been one of my biggest personal struggles. Unbeknown to most I use foundation to cover up blotches/itchies & dryness from my severe skin condition. Those who don’t know it I’ve been treated for the past 10 years with infusions and intense medications that have serious side effects. Without the treatment my body is covered 85% in psoriasis! Yes you read that correct 85% 🙈😳 it’s also in my bones😳😬, causing terrible pain & severe aches in my body. Mentally, imagine all the awkward body checks I must have had in my time? All those places you never see 😢covered in thickening of the skin and red scales & sores... 😖not to mention all those awkward & uncomfortable questions and stares! Including awful remarks from adults who blurt out “ewww what’s wrong with you”
So no wonder ive always been conscious about the skin on my face and the importance covering it up!
The impact all of this has had on my self and my family has often caused tremendous embarrassment for many reasons than I could list.

However the most exciting part after 6 weeks on my journey to new health I actually had results I never thought I’d be able to share 🙈 still feeling very vulnerable and conscious of sharing my journey, from fear of being judged or shamed! I feel good! and more importantly am so impressed with the results, something I’ve never been more excited about sharing than right now 💞

If you’ve got skin issues or itchies! I feel your pain 🙌🏼 If you’ve got children with skin problems, i feel their torcher from the constant bullying & stares! This is reminiscent of my childhood. My Mom always had sliced cucumber with red onions, vinegar and oil, salt, pepper, (& garlic if my dad wasn’t eating it. He did not like garlic) in the refrigerator. My dad was always smoking fish he had caught.  As I was just about done making this, I realized what I had made. 
Maybe we just need to go back to the way our parents and grandparents ate. Fresh (as in homegrown), simple ingredients, and not processed and from a box. 
I used extra virgin olive oil, Braggs organic apple cider vinegar w/ the mother, Redmond’s salt, and dill. And the fish is kippered herring.

Marinated Grilled Zucchini! 
2-3 medium-sized zucchini, sliced into spears
1/4 cup olive oil
3-4 garlic cloves, crushed
1 tsp basil
1 tsp oregano
salt & pepper, to taste (eliminate pepper for AIP)

Combine ingredients into a ziplock bag or shallow container. Marinate for at least 3 hours or overnight. Remove from marinade and grill for 5-7 minutes or until grill lines appear. Flip spears and continue to grill until zucchini is tender.

Serve with Plank Salmon if desired.

BBQ Plank Salmon with Maple Peach Salsa! Peaches from @stleongardens 🍑 
Ingredients:

Salsa:
4-5 peaches, chopped
1 Tbsp Maple syrup
1 Tbsp fresh squeezed lemon juice
1 green onion, chopped
3 tbsp, chopped fresh basil

Salmon:
4 small salmon fillets or 1 large
1 Cedar Plank-soaked for 4 hours or more

Directions:

1. Combine salsa ingredients together and set aside.

2. Place salmon fillet on plank. Scoop half of the salsa on top of the salmon. Ingredients:

Salsa:
4-5 peaches, chopped
1 Tbsp Maple syrup
1 Tbsp fresh squeezed lemon juice
1 green onion, chopped
3 tbsp, chopped fresh basil

Salmon:
4 small salmon fillets or 1 large
1 Cedar Plank-soaked for 4 hours or more

Directions:

1. Combine salsa ingredients together and set aside.

2. Place salmon fillet on plank. Scoop half of the salsa on top of the salmon. When reading this book I was immediately drawn in, and it felt like it was written for me, its like it just understood these past few years I’ve had so well and was re-capping all of the difficulties and experiences I’ve  had, actually bringing me to tears. I know it sounds a little dramatic, but I just loved reading this book so much and how it approaches autoimmune health in such a unique way. (As I read this a few months ago I feel like I need to read it again to refresh my mind and properly go over the different recipes, herbs, supplements and healing techniques mentioned, as there is just so much in the book to take in so will definitely be re-reading it again soon). ➖

Eczema is never a pleasant thing to deal with.

Hi I’m Aimee Grace, I’m 33 years old and have been living with plaque psoriasis since I was 14. It was in February last year, after contracting tonsillitis, that patches of guttate psoriasis spread all over my face and body. At first the doctors misdiagnosed this as chicken pox so I was using calamine lotion which made my skin worse drying it out. The toughest part of all of this wasn’t the pain, itching or discomfort but having to come to terms with the drastic change in my appearance. At first I couldn’t look in the mirror. I spent a few weeks staying at my mums house, sleeping in her bed along side her because I’d dread waking up alone, even then I’d wake everyday crying. Even harder was other people’s reactions, strangers would stare and point at me in the street. At work customers would ask not be served by me incase I was contagious. Then after a newspaper found an Instagram post of mine and they published an online article about my skin condition the online bullying started. The trolling was awful, It’s crazy to see how cruel people can be, and some of these people make you realise what’s wrong with society. One that stands out was a mother possibly late thirties/early forties photographed with her pretty teenage daughter wrote a comment on my photo saying if her daughter looked like me she’d disown her! i was also told by a man to take my own life because I was hidious and offensive. But with the help of my friends and family it didn’t take me long to brush myself and those nasty comments off and share my story. Since then my posts have helped others with the same condition and others with mental health problems, opening up many amazing opportunities for myself including a nomination for Mental Health Blog 2019. Many people ask how I treat and manage my psoriasis. Ill be honest I’m still finding this out for myself. I do not wish to influence people into trying something I’m unsure of or that could have a negative reaction to someone else’s psoriasis. I do know that light therapy worked wonders for me and coconut oil continues to relieve my skin, it takes away the flaking and redness. I’ve learned so many life lessons since my outbreak of guttate. After a few days of irritated and noisy intestines I decided to go on a few days of ”easy to digest”-foods. I didn’t feel like anything with coconut flavour. Found a really nice AIP recipe for tigernut/chufa porridge from #dorimax 
Mix 1 dl (1/2 cup) och tigernut/chufa flour with 1,5 dl (3/4 cup) of water and a pinch of salt. Zimmer for 3-4 minutes. Serve with prefered milk, in the picture banana milk (2dl/1cup of water blended with a frozen banana) and berries that are not to sweet. I used lingonberries. 
The taste of the porridge is quite sweet and it tastes a little like sweet almonds. 😋

A week of consistent effort 💪🏼🥵

I feel so much better when I exercise, but it’s always been such a struggle. Now I’m FINALLY on medication I can go to the gym consistently and not suffer severe fatigue as a result.
.
So far I’ve lost 11lbs since I was diagnosed with Hashimotos and medicated. I still have 45lbs I want to lose. I’ll do weight loss posts soon!
